WILD Feast at the Waterfront — A Culinary Journey Across the Atlantic
On 28 November 2025, Cape Town becomes The Meeting Place — where Africa and the Caribbean unite through flavour, music, and heritage.
Begin your evening with a fine champagne pour, as special guests share reflections that set the tone for a night of cultural connection and celebration
Then, embark on a four-course fine-dining journey curated by chefs Absalom Kotsokoane (South Africa), Adrian Cumberbatch (Barbados), and Wisani Marivate (South Africa) — each course paired with premium wines from South Africa’s smallholder vintners.
The Menu — A Taste of Heritage and InnovationAmuse-Bouche — Freedom Reimagined: Chilled butternut essence with roasted seeds and delicately braaied beef, drizzled with spice-infused oil – an exquisite reinterpretation of Haiti’s iconic dish of liberation.Entrée — Gogo’s Untold Story: Roasted sweet potato in jacket, layered with bambara groundnut purée, sorghum popcorn, and vibrant edible blooms, finished with Cape Malay–infused umleqwa (traditional chicken).Main Course — Tides of Connection: Pulled lamb shank with Barbadian spices, roasted cassava fondant, and a whisper of sea lettuce — where the earth’s harvest meets the ocean’s bounty.Dessert — An Ode to Cacao: Silken panna cotta, layered with premium chocolate elements and seasonal fruits paired with Setšong’s indigenous tea — a ritual sip of Limpopo’s wild flora.Post-Dessert Toast — Rising Spirits: A closing celebration of connection and creation, embodied in our WILD signature Rum Cocktail crafted from Guyana’s El Dorado Rum and Cape wild sour fig. Raising a glass to shared roots and new routes.
Accompanied by the soulful rhythms of a live steelband, the evening unfolds as a sensory dialogue — where every flavour tells a story and every note bridges continents.
This inaugural WILD Feast marks the launch of a bold AfriCaribbean culinary diplomacy initiative. A taste of a new tourism and cultural bridge spanning continents.
